Need Help Determining Your Pitch Rate?

 

There are many schools of thought on pitch rates. One rule of thumb is to pitch 1 million cells per mL per degree Plato for ales. By applying this rule, for example, a 16 Plato (1.065 specific gravity) wort would be pitched at a rate of 16 million cells per mL. Yet another rule of thumb includes pitching 0.75 million cells/mL per degree Plato for ales under 1.065 specific gravity (twice that rate, i.e., 1.5 million cells/mL per degree Plato for lagers) and 1.5 million cells/mL per degree Plato for ales over 16 Plato. Applying this rule, for instance, would result in an ale yeast pitch rate of 9 million cells/mL for a 12 Plato (1.048 specific gravity) wort. Generally, a pitch rate of 7 million cells/mL should be adequate for ales under 1.060 (15 Plato).
