Description- Chiswick is a highly flocculent strain, resulting in very clear beer, but also in a lower attenuation range which leaves behind a residual malty sweetness.  Imparts moderate ester and fusil notes, producing a delicately balanced product.

Pitching/Fermentation notes -– Because of Chiswick’s high flocculation, the yeast will settle from the beer without chilling.  However, this means that following attenuation, it will not reabsorb diacetyls as readily as other strains.  To increase diacetyl reabsorption, allow the yeast to remain in the beer for two days past attenuating, and agitate the fermentation vessel occasionally to resuspend the yeast.
